400g Skinless Bonless Chicken Thigh
600g Chicken Breast
1 Tin of Chopped Tomatoes
300ml Chicken Stock
1 Red Bell Pepperz
1 Chopped White Onion
1-3 Chopped Red Chilli
2 Crushed Garlic Cloves
Hot Sauce: too taste!
2 Tablespoons of Yellow Mustard
1 Teaspoons of Brown Sugar
Low Calories Frying Spray
First, Brown off the chicken in a frying pan with the chopped onion. Then add the chilli, garlic and pepper and cook for a further 2-3 minutes.
Next, Have your chicken stock ready and pour over it into the pan covering the chicken, onion, garlic, chilli and peppers.
Preheat your oven - ( or you can use a slow cooker)
Pour contents from frying pan into oven proof dish (or slow cooker)
Add the tin of chopped tomatoes, mustard, sugar and hot sauce!
If cooking in the oven, I would recommend 45-60 minutes
If using a slow cooker I would recommend low for 6 hours
Top Tip: Shred the chicken using two forks!
Add to your carb of choice for a healthy, tasty meal.
Xtreme Tip: Once finished cooking, drizzle (or pour) more hot sauce over the top for extra flavour!
